Tomato Aachar
Ingredients
- Ripe tomatoes – 500g (chopped)
- Salt – 2 tsp
- Red chili powder – 1 tsp
- Turmeric powder – ½ tsp
- Mustard seeds – 1 tsp
- Fenugreek seeds – ½ tsp
- Garlic cloves – 4–5 (optional)
- Mustard oil – 50 ml
- Vinegar – 1 tbsp (optional)
Recipe / How to Make
Wash and chop the tomatoes into small pieces. Heat mustard oil in a pan and add mustard seeds and fenugreek seeds. Add garlic (if using) and sauté lightly. Add chopped tomatoes, salt, turmeric, and red chili powder. Cook on low flame until the tomatoes soften and oil separates. Allow the mixture to cool completely. Transfer to a clean glass jar and store in a cool, dry place. For enhanced flavor, let it rest for 1–2 days before serving.
