Pineapple Aachar
Ingredients
- Fresh pineapple – 500g (peeled and cubed)
- Salt – 2 tsp
- Red chili powder – 1 tsp
- Turmeric powder – ½ tsp
- Mustard seeds – 1 tsp
- Fenugreek seeds – ½ tsp
- Mustard oil – 50 ml
- Jaggery – 1–2 tbsp (optional for sweet-spicy taste)
- Vinegar – 1 tbsp (optional for longer shelf life)
Recipe / How to Make
Peel and cut the pineapple into small cubes. Ensure there is no excess moisture. Mix salt, red chili powder, turmeric, mustard seeds, and fenugreek seeds. Add pineapple pieces and mix thoroughly. Heat mustard oil until hot, let it cool slightly, and pour over the mixture. Add jaggery if you prefer a sweet-spicy flavor. Transfer everything into a clean glass jar and keep it in sunlight for 2–3 days. Stir once daily for even flavor development.
