Ginger Aachar
Ingredients
- Fresh ginger – 250g (peeled and thinly sliced)
- Salt – 2 tsp
- Red chili powder – 1 tsp
- Turmeric powder – ½ tsp
- Mustard seeds – 1 tsp
- Oil – 50 ml
- Vinegar – 1–2 tbsp (optional, for preservation)
Recipe / How to Make
Peel and slice the ginger thinly. Dry the slices in sunlight for 1–2 hours. Mix with salt, red chili powder, turmeric powder, and mustard seeds. Heat oil and pour over the mixture. Stir well and store in a clean glass jar. Let it sit for 2–3 days before consuming to develop the flavor.
