  1. Wash and chop all vegetables into small bite-sized pieces.
  2. Mix the salt, chili powder, turmeric, and hing with vegetables.
  3. Heat mustard oil and add mustard & fenugreek seeds until they crackle.
  4. Add the vegetables and spices mixture to the hot oil.
  5. Cook on low flame for 5–7 minutes until oil separates.
  6. Let it cool and store in a clean, airtight glass jar.
