Mixed Vegetable Aachar Recipe
Ingredients
- Carrot – 100g
- Cauliflower – 100g
- Green beans – 100g
- Salt – 2 tsp
- Red chili powder – 1 tsp
- Mustard seeds – 1 tsp
- Fenugreek seeds – ½ tsp
- Mustard oil – 50ml
- Turmeric powder – ½ tsp
- Asafoetida (Hing) – a pinch
Recipe Instructions
- Wash and chop all vegetables into small bite-sized pieces.
- Mix the salt, chili powder, turmeric, and hing with vegetables.
- Heat mustard oil and add mustard & fenugreek seeds until they crackle.
- Add the vegetables and spices mixture to the hot oil.
- Cook on low flame for 5–7 minutes until oil separates.
- Let it cool and store in a clean, airtight glass jar.
