Onion Aachar
Ingredients
- Small onions (shallots) – 500g (peeled)
- Salt – 2 tsp
- Red chili powder – 1 tsp
- Turmeric powder – ½ tsp
- Mustard seeds – 1 tsp
- Oil – 50 ml
- Vinegar – 1–2 tbsp (optional for longer shelf life)
Recipe / How to Make
Peel and wash the onions, then dry them properly. Mix with salt, red chili powder, turmeric, and mustard seeds. Heat oil until hot and pour it over the onion mixture. Stir well and transfer to a clean glass jar. Let it rest for 2–3 days so the flavors fully develop before serving.
