Chili Aachar
Ingredients
- Fresh green or red chilies – 250–300g
- Salt – 2 tsp
- Red chili powder – 1 tsp (optional for extra heat)
- Turmeric powder – ½ tsp
- Mustard seeds – 1 tsp
- Oil – 50 ml
- Vinegar – 1–2 tbsp (optional, for longer shelf life)
Recipe / How to Make
Wash and dry the chilies. Remove stems if preferred. Cut them into small pieces or leave whole with slits. Mix with salt, turmeric, and red chili powder. Heat oil and pour over the mixture, then add mustard seeds. Mix well and store in a clean glass jar. Let it sit for 1–2 days before consuming to develop flavor.
