Carrot Aachar
Ingredients
- Carrots – 500g (peeled and julienned)
- Salt – 2 tsp
- Red chili powder – 1 tsp
- Turmeric powder – ½ tsp
- Mustard seeds – 1 tsp
- Oil – 50 ml
- Vinegar – 1–2 tbsp (optional, for longer shelf life)
Recipe / How to Make
Wash, peel, and cut the carrots into thin sticks or cubes. Dry them in sunlight for 2–3 hours. Mix with salt, red chili powder, turmeric, and mustard seeds. Heat oil until hot and pour over the carrot mixture. Stir well and transfer to a clean glass jar. Let it sit for 1–2 days before eating to develop flavor.
