Tamarind Aachar
Ingredients
- Tamarind pulp – 250g
- Salt – 1½ tsp
- Red chili powder – 1 tsp
- Turmeric powder – ½ tsp
- Roasted cumin powder – ½ tsp
- Mustard seeds – 1 tsp
- Fenugreek seeds – ½ tsp
- Mustard oil – 40 ml
- Jaggery – 1–2 tbsp (optional for sweet taste)
Recipe / How to Make
Soak tamarind in warm water and extract thick pulp (if not using ready-made pulp). Heat mustard oil until hot and allow it to cool slightly. In a bowl, mix tamarind pulp with salt, red chili powder, turmeric, roasted cumin powder, mustard seeds, and fenugreek seeds. Add jaggery if you prefer a sweet and tangy flavor. Pour warm oil over the mixture and stir well. Transfer to a clean glass jar and store in a cool, dry place. Let it rest for 1–2 days before serving.
