Pumpkin Aachar
Ingredients
- Pumpkin – 500g (peeled and cubed)
- Salt – 2 tsp
- Red chili powder – 1 tsp
- Turmeric powder – ½ tsp
- Mustard seeds – 1 tsp
- Fenugreek seeds – ½ tsp
- Mustard oil – 50 ml
- Vinegar – 1–2 tbsp (optional)
Recipe / How to Make
Peel and cut the pumpkin into small cubes. Wash and dry thoroughly. Mix salt, red chili powder, turmeric, mustard seeds, and fenugreek seeds in a bowl. Add pumpkin pieces and coat evenly with spices. Heat mustard oil until hot and allow it to cool slightly before pouring over the mixture. Mix well and transfer to a clean, dry glass jar. Keep the jar in sunlight for 2–3 days, stirring once daily for best flavor.
