Beetroot Aachar
Ingredients
- Beetroot – 500g (fresh, firm)
- Salt – 2 tsp
- Red chili powder – 1 tsp
- Turmeric powder – ½ tsp
- Mustard seeds – 1 tsp
- Oil – 50 ml
- Vinegar – 1–2 tbsp (optional, for longer shelf life)
Recipe / How to Make
Wash and peel the beetroot, then cut into thin cubes or slices. Dry in sunlight for 2–3 hours. Mix with salt, red chili powder, turmeric, and mustard seeds. Heat oil until it smokes lightly, then pour over the beetroot mixture. Mix well and store in a clean glass jar. Let it sit for 2–3 days to develop flavor before consuming.
